Pantry Raid: Ziti with Tuna

Ever had those times where you had almost nothing left in your fridge or pantry, but were too lazy to go out and do something about it? This was one of those times. A couple cans of tuna, a box of ziti, some canned tomatoes, and some onion go a long way.

This is a go-to meal when this is all that’s left in the house. Again, I don’t cook from recipes, but here’s my approximation on the dish.

Sauce:
– 1 28 ounce can whole tomatoes
– 1 14 ounce can tomato sauce
– 1/2 large onion, diced
– 3 cloves garlic
– 2 cans of Italian tuna, packed in olive oil (or whichever type you like)
– Salt & pepper to taste
– Red Pepper Flakes
– zest of 1 lemon (juice if you like)
– olive oil (1-2 second pour)
– Capers (optional, didn’t have any this time)

– Your choice of pasta

Steps:
– Start a large stockpot of water to boil
– Heat up the olive oil in a sauce pan over medium, add red pepper flakes if you are using them
– While oil is heating, slice garlic thinly, and cook in oil for a couple minutes

– Dice up onion, and after garlic is translucent, saute onion until it is soft and translucent as well

– Add the 28 ounce can of whole tomatoes and crush them, cook for 5 minutes


– Add the 14 ounce can of tomato sauce and continue to cook over medium heat for another 10-15 minutes


– While sauce is cooking, add a small handful of salt to the boiling pasta water, then cook to taste
– As pasta cooks, Add tuna to the sauce and simmer until pasta is done.


– After pasta cooks, add to the saucepan and simmer for a couple minutes

– Serve

ENJOY…not a time-consuming or fancy meal by any means, but good stuff. And easy enough to do.

Top Chef All-Stars!

I’m pretty excited to hear about the contestants in the upcoming season of Top Chef. I’m glad that they decided to bring back these contestants in a full season (Season Eight) rather than some holiday episode or a one-time deal as they have in the past. Even if you’re only a casual fan, you should be able to spot some familiar faces. I’m kinda stoked to see Tre from season 3 back, as he was a very strong contender for the title that season…another good chef to fall in Restaurant Wars! I’m pretty surprised to see Casey Thompson, also from season 3, back on the show. She was in the finals with Hung and Dale, but after the debacle as Carla’s sous-chef in season 5, and the backlash, I didn’t think she’d want to be anywhere near TC anymore. Either way, good to have her back…she was solid that year!

Other notables include Spike and Marcel…both good chefs, and both with strong personalities.

Fun foodie fact: At least two of the chefs have been sous-chefs on Iron Chef America at some point: Tre Wilcox for the Rathbun brothers, and Richard Blais for Cat Cora (repeated appearances)

Thrill of the Grill: Sunday, September 19th, 2010

Who doesn’t love grilled food, I mean really? The awesome char on a steak or other piece of meat. The smokiness, the seared in flavors, nothing beats it.

I decided to grill up some Chimichurri skirt steak, along with some roasted garlic aioli, and some onion rings (store bought, but sometimes ya just need a shortcut, lol)

And dessert…I grilled up some peaches and attempted to make a grilled peach dessert with a crumble. This was a semi-success and also a semi-failure dish. The peaches cooked just fine, but then I didn’t mix the brown sugar/flour/butter crumble correctly, so I scrapped that. Oh well, some vanilla ice cream and cinnamon fixed that. See below! I don’t really cook from recipes, but in the future I may at least try to conjure up the steps that I took to cook whatever it is I made.

Food from my trip to Singapore and Malaysia

So much good food, including Dim Sum, snacks at the Marina Sands Hotel, Satay and other foods from Lau Pa Sat, and Chicken Rice (Singapore’s national dish).

The only thing I didn’t really care for was the Durian, the spiky looking fruit.

Welcome…

Welcome to my new blog. I am posting mainly to catalog different things that I try related to food and/or cooking. I will be posting with random thoughts, new experiences, and my successes (and failures) related to all things culinary. Or possibly other ramblings, lol.

I enjoy creating new things and trying to fuse different types of food, or trying to re-create other dishes, usually with a spin on it. Enjoy! And have fun playing around with food, you may end up creating something you’ll love too!
